Designed as a party-sized premix which is loaded with the essence associated with Christmas time, which makes it ideal for your holiday party. Save the extra citrus syrup you can use for brunch beverages, desserts, or for another batch of the drink.
The Bikini Cocktail
Makes enough for 10 guests
Ingredients for the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Cocktail (makes 850ml, to serve 10)
400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Directions
For the Cordial: Put every ingredients in a pot, heat until it reaches a light boil, stirring until the sugar dissolves. After that, turn off the burner allowing it to cool completely. Decant into an sterilised bottle, seal and store in the refrigerator, where it will keep for about one month.
For the Batch Mix: Combine all the liquids into a large bottle, allow it to infuse for an hour, then pass it through best through cheesecloth, to ensure it's perfectly clear.
For serving: Pour 85ml of the batch mix into your stirring glass containing ice, gently stirring carefully for about 60 seconds to chill. Pour into a chilled martini glass or a similar vessel, decorate with some cranberries and finish with a quick spritz with the mandarin essence above the glass.
